Day one is a quick reflection back to one of the interesting projects that I have the privilege to be part of.

Recently, I was asked to be a judge for the Rotary Lite Young Chef competition.  A special thank you to all those involved in this competition, the dedication and support you provide to the community shines through and it is an honour to be part of this.  I look forward to all the tasting in the next round.

Well done to all the students who took part in the competition this morning at The Burton Borough School in Newport. Congratulations to the winner and runner-up, they who will be receiving mentoring from Chef  Peter at The Orchard in Newport.  Peter has an important role in the Craft Guild of Chefs and his skills with guiding the students shone through.  I will assist with dishes and planning so they can work to meet their deadline as the next round is particularly difficult.

Today’s Spicing on Day One will be all about Indian Spicing the Christmas menu.  Brussels, carrots and chestnuts will be “chef crushed” the turkey will be in a jalfrezi, the Daal will be Christmas spiced and the potatoes will be a tandoori.  Wish me luck and if you’d like me to share the recipes, please ask.
