Leftover Christmas Butter Curry – Deliciously simple to use up those leftovers!Try using this as a deliciously rich curry base for leftovers. It will be great for turkey or a selection of vegetables.Note if the turkey or vegetables are cooked, please pop them into the sauce to warm through once the sauce is cooked and BEFORE the finishers go in.If the main ingredients are raw, pop them into the cooked sauce, again before the finishers and allow to simmer until cooked through.For the Curry sauce2 tbsp butter and 1 tbsp of oil1 inch ginger, peeled and finely grated2 cloves garlic, peeled and finely grated 2 tablespoons of cashews or almonds 250ml passata 2 teaspoons of curry masalaAs a final season,chilli flakes, garam masala, sugar and salt.To Finish: 50ml double cream, fresh coriander, fresh lemon or lime, and another big knob of butter (it is Christmas)Make your Curry SauceStart by soaking the nuts in a little boiling water to soften them and then either grind them using a pestle and mortar or a food processor.Gently fry grated ginger and garlic in a pan on a low heat with oil and butter for 5 minutes, add the curry masala spices with the nut paste and cook on a medium heat, keep stirring until oil bubbles float to the top. It should take about five minutes.Pour the passata into the sauce, bring to the boil, simmer until you have a golden, glossy sauce for about 10 minutes.If the pan dries at any time, please add 2 tablespoons of water so the spices don’t burn.Add the Main curry ingredients into the sauce and seal them into the sauce until oil bubbles appear, simmer until the base is cooked or warmed through.Add an extra knob of butter to create a rich, creamy sauce. It is Christmas and let’s use up all the leftovers.Check seasoning add extra chilli, garam masala, sugar (it’s great against the tomato) and salt now, to taste. Finish with double cream, some fresh coriander, a squeeze of lemon or lime (it’s not just for gin).
