Cauliflower and broccoli with chef crush and nuts
Print this recipeThis recipe is one of those special dishes that simply delivers on flavour, health benefits and you can swap the vegetables around to suit you.
Adding the nuts and seeds helps to pack in some extra protein.
For the nuts, I have used some almonds, flaked and whole, the desiccated coconut adds sweetness and the seeds add some extra crunch – please be as creative as you like with this, as long as they make about a small bowl in total, that should be fine.
I use chef crush, my own mix of spices, if you don’t have it, use a teaspoon of cumin seeds.

Cut the cauliflower and broccoli into florets and rinse leave to drain in the colander.
Grate the ginger and garlic.
Fry the ginger and garlic together adding a splash of water to prevent the garlic burning and to aid cooking.
Add the turmeric, salt and Lajina Masala Chef Crush, stir well adding another splash of water to prevent the spices from burning.
TOP TIP IF YOU WANT A SPICY DISH stir-fry YOU COULD ADD FRESH CHILLI OR CHILLI FLAKES TO THE PAN
Add the chopped and rinsed cauliflower and broccoli and stir-fry adding more water if needed.
TOP TIP – DON’T OVERCOOK THE VEGETABLES THEY SHOULD HAVE SOME ‘BITE’ WHEN THE DISH IS FINISHED.
TOP TIP – AT THE END OF COOKING YOU COULD ADD FRESH CHOPPED TOMATO OR A HANDFUL OF CHERRY TOMATOES.
Garnish with some fresh herbs (I used coriander) and enjoy alongside a piece of chicken or fish and add some zing to your day.
