Garam Masala Nuts
Print this recipeI don’t know about you, but we love, love nuts and I seem to spice a batch and they soon get eaten with or without drinks.
Choose your favourite nuts, I switch between almonds, cashews, pecans, Brazils, walnuts, pistachios occasionally I might just add sunflower seeds.
I switch between roasting the nuts in the oven and other times, depending on my mood, I might just stir-fry a batch in a wok.
This version can be roasted in the oven, pop all the ingredients on a baking sheet, give them a big stir. Bake in a pre-heated oven on 170c or gas mark 3 for 15 minutes, make sure you give them a shake, halfway through.
If you are avoiding honey, then brown rice syrup or maple syrup will be a good alternative.
Whichever way you choose to cook them, roast or stirfry, please do not eat or taste these until they are cool.
They should come with a warning, totally addictive.

Take 250g of mixed, raw and unseasoned nuts, cashews, peanuts, almonds, walnuts, pecans, hazelnuts, pistachios, macadamias, brazils, choose your favourites.
Add a splash of sunflower oil into a big wok and warm through, add the nuts and keep stirring to prevent them from burning.
Add 1 tsp of garam masala, 1 tablespoon of honey or maple syrup and a pinch of salt.
Stir-fry for 5 minutes, keep an eye on the nuts, stirring all the time.
Keep stirring and then tip onto a baking sheet, that's been lined with greaseproof paper or foil.
They will stick together but give them a shake once cool to separate the nuts.
Allow to cool before you try them... and you might like to make extra because they don't last very long!
