⭐ The Most Useful /tip for Spice Cooks! Here’s the simplest universal rule for Indian cooking:🌶️ WHOLE spices → at the beginning (hot oil)They season the oil, cumin seeds, mustard seeds, bay leaf, cloves, cinnamon, remember it's part of the spice layering process.Lajina Masala Spices CHEF CRUSH🌶️ GROUND spices → in the middle (after onions)Usually sautéed briefly so they don’t burn. 🔥 Recipe Teaser: The Quickest Curry Base Ever!Want to whip up a delicious homemade curry in under 30 minutes?Here’s a sneak peek of my Quickest Curry Base Ever — a simple, flavour-packed foundation you can turn into endless curry variations.What makes it amazing:• Uses everyday ingredients you probably already have• Ready in one pan and freezes beautifully• Turns into kormas, bhunas, masalas and more with just a few tweaks• Perfect for busy evenings when you want real flavour fastHere’s how to get started:Chuck the following into a food processor and blitz into a fine paste — the simplest, boldest curry base:• 2 medium onions, peeled and roughly chopped• 4 cloves garlic, peeled• 1 inch ginger, peeled and roughly chopped• 1 tbsp cooking oil• 1 tbsp tomato purée• ½ tin chopped tomatoes• 1–2 tbsp curry masala• Generous pinch of saltTo cook:Fry the blended paste in a solid pan with a generous blob of butter until little bubbles of oil begin to appear around the edges — this is hugely important as it ensures the spices are fully cooked.This will take 5–10 minutes.
